A popular dry subzi that goes with rotis.
Ingredients
- Methi - 2 bunches (finely chopped)
- Potatoes - 3 Big
- Onion - 1 small (finely chopped)
- Garlic paste - 1tbsp
- Red chilli powder - acc to taste
- Coriander powder - 1/2 tbsp
- Cumin powder - 1/2 tbsp
- Garam masala - 1/4 tbsp
- Cumin seeds - 1/2 tbsp
- Mustard seeds - 1/2 tbsp
- Lemon juice / amchur powder - 1/2tbsp (optional)
- Salt - acc to taste
- Oil
Procedure
- Cut potatoes into cube shape and finely chop the methi leaves.
- Take a wok (cook at medium heat) and add oil, Cumin and mustard seeds.
- Once they start spluttering, add onions and garlic and fry till golden brown.
- Add potatoes, fry for a while and sprinkle some water. Put a lid on top and allow it to cook.
- Once they are half cooked add chopped methi and salt. Keep mixing at regular intervals for 3 to 4mins.
- Now add all the dry powders and mix well. Temper the heat and keep mixing till potatoes are cooked and garnish with fresh coriander.
